Hi Everyone,

Every day brings a chance for new beginnings. Every day can be a fresh start. Whatever happened yesterday and what will be tomorrow, isn't really relevant. We can choose to smile, to overcome, to begin something new. We are born again every day. We jump between rain drops, the thunder, the heat, and the bitter cold of life. Nature is a metaphor for our lives. 

The cycle of the seasons demonstrates that we constantly need to shed the stale, old and anything that doesn't serve us anymore. We can adopt that in our own life and release what's weighing us down.

When it comes to your home and especially your clothes, make a point to stare at it like you haven't before. Really look at what you have and ask yourself: does this piece of home decor represent who I am today? Maybe your taste evolved and changed, maybe not. Take a look at your clothes and shoes. Are they in good shape? Do they still fit well? Do you love them?

If the answer is no, maybe it's time to let it go and donate, or repair or shine these great pair of boots you still love. Whatever it is, it's time to take action.

Today start anew, look at your space and closet differently. Shed what you don't need, recognize what's missing at your home and closet, and watch as that heavy weight leaves your body and mind and literally exhale.

Keeping your physical space clean, organized and intact is essential to your well being, so just like nature, let it all go but keep what works. It will give you clarity and peace, and we all need that.

So as you watch nature change, do the same. Be one with nature. The universe is wise and we can all learn from it.

Most importantly, spend time outside and take it all in.

This easy to make Tuscan bean soup is the perfect meal for fall and winter weather or busy weeknights any time of the year!
Easy Tuscan Bean Soup
Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion - diced
  • 2 medium carrots - diced
  • 2 stalks celery - diced
  • 1 medium zucchini - diced
  • 1 yellow summer squash - diced
  • 4 cloves garlic - pressed
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 quart vegetable - or chicken broth
  • 2 14 ounce cans cannellini beans, drained and rinsed
  • 1 14 ounce can no-salt-added diced tomatoes with juices
  • 3 cups chopped kale - ribs removed
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon white sugar
  • 1 tablespoon white wine vinegar
    1. Heat 2 tablespoons of olive oil in a 6 quart or larger Dutch oven over medium-high heat. Add the onions, carrots, celery, zucchini, and squash. Saute for 4 minutes.
    2. Add the garlic, red pepper flakes, thyme and rosemary. Cook 30 seconds.
    3. Stir in the broth, beans, and tomatoes. Bring the contents to a boil, then turn the heat down to low and add the chopped kale. Cover the pot and simmer for 15 minutes.
    4. Use an immersion blender to partially puree the soup, leaving some chunks of beans vegetables for texture.
    5. Add the salt, pepper, sugar, and vinegar. Taste and adjust seasonings as needed.
    6. Serve topped with Parmesan or Dubliner cheese and a side of crusty bread.
